Baoshan Brewery was founded in the 18th year of the Meiji era (1885) and is located on the road connecting the famed Iwamuro Onsen, known as the "hidden retreat of Niigata," and the revered Yahiko Shrine, which boasts the title of "Echigo's first shrine." It is renowned for its "Daiginjo Baoshan," which won a gold medal at the "Spring National Sake Competition." In addition to brewing sake using the popular Yamada Nishiki and Niigata's sake rice "Koshitanrei," the brewery also experiments with brewing using Koshihikari rice, which is generally considered unsuitable for sake production. The brewery is open to the public year-round, offering free tours of the brewing process (reservation required). In the brewery, which has been in use since its establishment, visitors can not only observe the sake-making process but also enjoy tastings of fresh sake before it hits the market in a Japanese-style room with a view of the garden. In addition to tasting fresh sake, guests can listen to explanations from the brewery staff about the behind-the-scenes stories of sake and ways to enhance the tasting experience.
