Details

Tsuchida Sake Brewery was established in 1907. As the only sake brewery in the Kanto region to receive a prestigious award, it has always been loved by locals under the brand name "Yorokuni Kล" (่ช‰ๅ›ฝๅ…‰). Throughout different eras, the brewery has continuously innovated its brewing techniques while maintaining and reflecting the historical evolution of the brewery. When mentioning the innovations of the current sixth-generation heir, Hiroshi Tsuchida, it should be noted that he has completely transformed the traditional method of "no need to bring down from the mountain" (a method of mixing rice and water in the brewery with natural lactic acid bacteria for fermentation) into the "Kimoto method" (็”Ÿ้…›้‡€้€ ๆณ•). The Kimoto method inherits the natural fermentation techniques using lactic acid bacteria from the Edo period (1603-1867). In this article, there is also an attempt to use low-polished rice and table rice for brewing to evoke the flavor of the rice. At Tsuchida Sake Brewery, there are activities held regularly where visitors can closely observe the new brewing methods. First, visitors watch a video about the charm of the brewery in Kawaba Village and the sake brewing process, followed by a tour of the brewing process. Afterward, they can compare and taste various types of sake. Tsuchida Sake Brewery focuses on brewing sake using three main ingredients: "rice," "water," and "koji" (้…’้บฏ), along with "bacteria." One of the ongoing challenges is how to bring out the umami of the rice, allowing people to experience the diversity and complexity of sake. To blend the traditional techniques of the Edo period with the latest technologies and pass them on to the next generation, this brewery is constantly taking on new challenges every day.

Highlights

It has always been loved by locals under the brand of the local sake "่ช‰ๅ›ฝๅ…‰" (Yoshikokko). Its็‰น่‰ฒ is the use of both ancient and innovative brewing methods. You can visit the sake cellar for free (approximately 30 minutes). To visit the sake cellar, you need to make a reservation by phone two days in advance (0278-52-3670).
