TAKASE (たかせ) is a long-established restaurant in Yamaguchi Prefecture known for its local dish, tile soba noodles. Tile soba is a noodle dish that features matcha soba noodles served with ingredients like beef and egg strips on a hot tile. During the Satsuma Rebellion, soldiers used tiles to cook wild vegetables and meats in the field, and "TAKASE" was inspired by this to develop tile soba, which gradually became a local delicacy in Yamaguchi.
TAKASE's matcha soba noodles are made with Uji matcha, giving them a rich tea aroma. They are served with a dipping sauce made from a generous amount of bonito and kombu, which has a hint of sweetness, along with green onions, lemon, and spicy radish paste. TAKASE has four branches within Yamaguchi Prefecture, and the Kawahama Main Branch is a century-old building that still retains its original appearance, creating a charming atmosphere.
