Ramen Shibin is a well-known ramen shop in the Tōryō area. From selecting ingredients to cooking, no effort is spared; the noodles are homemade every morning, and the broth is simmered overnight. The chashu is sliced and plated just before serving. Throughout the cooking process, no chemical seasonings are used.
The shop is conveniently located along a main road, making it easy to find. Ramen Shibin opened in 2014, and the owner has honed their culinary skills in a steak restaurant. To allow customers to enjoy delicious dishes early in the morning, the owner broke the usual convention of ramen shops opening in the evening and opens at 7 AM. The tasty ramen attracts local patrons who often rush in early, sometimes forming long lines outside the shop.
The menu features soy sauce ramen, salt ramen, and tantanmen, but the most popular signature dish is the "Umaru Set." This set is quite substantial, including dipping noodles and a hamburger steak rice bowl. The hamburger steak rice bowl is particularly impressive, as it uses A4-grade black wagyu beef. The ground beef is processed in-house, seasoned only with French rock salt and coarsely ground black pepper, and topped with homemade kabayaki sauce, creating a truly moving delicacy. Despite the luxurious ingredients, the prices are very reasonable, contributing to its high popularity.
The signature dish is the hamburger steak and ramen set "Umaru."
Another recommended dish is quite innovative, called "Wheat Three Flavors," available starting at 10:00 AM daily. This dish mimics the kaiseki style of serving, presenting three different flavored noodle dishes in succession: mixed noodles, dipping noodles, and ramen (with choices of soy sauce, salt, or miso flavors). It is said that this ramen menu is the first of its kind in Japan, attracting many ramen enthusiasts who come from afar to indulge.
