About Suehiro Sake Brewery, Kaei Warehouse

Upholding the brewing secrets and artisan spirit of traditional sake brewing.

Details

Suehiro Sake Brewery, established in 1850, is located in the Aizuwakamatsu area, where many ancient sake breweries gather. It is a long-established sake manufacturer. The brewery has maintained three unwavering commitments throughout its history: "First, only natural spring water is used"; "Second, the traditional brewing techniques of Aizu are preserved"; "Third, only sake rice grown in the land where the brewing spring water flows is used." While inheriting brewing techniques, Suehiro Sake Brewery also dares to innovate, especially with its locally brewed sake, which is very popular. The "Yamahai brewing method," widely adopted by sake breweries across Japan today, was established by the fourth-generation brewer, Kinjirō Kagi, after repeated experimentation. Most of the buildings at Suehiro Sake Brewery have been designated as cultural properties and are ranked at the top of the "National Ranking of Sake Breweries Worth Visiting." The brewery is open to the public, offering free guided tours where visitors can learn about the authentic sake brewing process through experiences like tours and tastings. Visitors can also enjoy coffee brewed with the sake spring water and chiffon cake made with Daiginjo sake.

Highlights

In addition to selling sake, the store attached to the sake brewery also offers a variety of sake-related merchandise. Free brewery tours are held every hour from 10:00 AM to 4:00 PM (the tour lasts about 30 minutes). It is recommended to enjoy desserts provided by the brewery and coffee brewed with the brewery's spring water at the attached café.
