Using classic Kyoto ingredients such as matcha and soy milk, the renowned Kyoto wagashi manufacturer "Mijyu" presents the Kyo Baum (京ばあむ), a layered cake meticulously baked over low heat using exquisite artisan techniques. With branches located at famous tourist spots like Kiyomizu-dera's Kiyomizu-zaka, Arashiyama, and Kyoto Tower, it is a highly popular souvenir from Kyoto. The cake is made with carefully selected ingredients, including Uji matcha from the long-established tea shop "Morihan," established in the 7th year of the Tenpo era (1836), soy milk made from Kyoto's underground water, and flour from Hokkaido. The three-layered Baumkuchen consists of alternating matcha and soy milk cakes, topped with a layer of matcha icing. It has a moist and fluffy texture when eaten fresh, while chilling it makes the icing crisp and refreshing, offering a delightful variety of ways to enjoy it. At Kyo Baum's Kiyomizu store and Arashiyama store, you can find pastries and chocolates made with the same ingredients as the Kyo Baum. Additionally, there are various takeout desserts perfect for enjoying while strolling, including the long stick-shaped "Kyo Baum Cake Skewers" and "Kyo Baum Soft Serve" paired with ice cream (items may vary by season). In November 2023, "atelier 京Baum" officially opened in Kyoto.
