The restaurant takes pride in its 100% seafood broth made from a blend of various bonito flakes, including carefully selected flakes from the long-established "Kyoto Katsuo-bushi," slowly extracting flavor at low temperatures. Customers can choose between a light "white" broth made with white soy sauce or a rich "black" broth made with dark soy sauce. The chashu, made from the fatty and sweet Kyoto Mochi pork, perfectly absorbs the umami of the broth, creating an irresistible moist texture. The bonito flakes from Ibusuki are sliced to a thickness of 0.01 mm, releasing an appetizing aroma.
