The restaurant takes pride in its 100% seafood broth made from a blend of various bonito flakes, including carefully selected flakes from the long-established "Kyoto Katsuo-bushi," slowly extracting flavor at low temperatures. Customers can choose between a light "white" broth made with white soy sauce or a rich "black" broth made with dark soy sauce. The chashu, made from the fatty and sweet Kyoto Mochi pork, perfectly absorbs the umami of the broth, creating an irresistible moist texture. The bonito flakes from Ibusuki are sliced to a thickness of 0.01 mm, releasing an appetizing aroma. In addition to the yuzu included with the noodles to enhance the flavor, diners can add their own toppings, such as grated yam and kelp available on the tables. The homemade noodles, made from whole wheat flour, are produced in the noodle factory located on the second floor of the restaurant. They have a chewy texture that pairs perfectly with the broth.
