Claimed to be one of the three famous shops of Kitakata Ramen, this popular restaurant always has long lines. Kitakata has historically thrived in the brewing industry, including soy sauce, miso, and sake. With a variety of traditional storehouses lined up, it is known as the "City of Storehouses." The locals' favorite is the Kitakata Ramen, which is based on a soy sauce flavor.
Among the many Kitakata Ramen shops, Sakanai Shokudo, established in Showa 33 (1958), is famous for its "hand-kneaded noodles." The flat, aged noodles, which are made with extra water, are boiled just before serving, and are hand-pressed and kneaded before cooking, resulting in a chewy and elastic texture. The clear broth, made by simmering pork bones over low heat for a long time, is refreshing yet rich in layers, making it a perfect match for the noodles.
The most popular dish, "Shina Ramen," features special roasted pork that is so tender it melts in your mouth, accompanied by a simple combination of green onions and bamboo shoots. There’s also the "Negi Ramen," topped with finely chopped green onion and served with a special spicy sauce, and the "Niku Ramen," which has so much special chashu that the noodles are almost hidden. These are all popular items at the restaurant.
