In Fuchu City and Hino City, there are three branches of a creative cuisine izakaya. In fully private booth spaces, you can enjoy dishes and fine sake made from carefully selected ingredients sourced from various regions in Japan.
Fresh fish is delivered directly from the Toyosu Market and Kochi, while Wagyu beef comes from the Shiba Market, and Agu pork is shipped directly from Okinawa. The seasonal ingredients are selected from specific production areas, and dishes like sashimi, steak, and Binchotan charcoal are prepared to highlight the original flavors of the ingredients.
Most of the ingredients are sourced from the Shimanto region in Kochi Prefecture, and we recommend the "Hirakatsu Bonito Sashimi," which is served fresh on the same day it is caught, allowing you to enjoy a rare and exceptionally fresh delicacy that is hard to find in Tokyo.
The recommended sake is the exclusive "Kizuna" from the izakaya. This brand is brewed by the long-established brewery "Fuji Musume" in Shimanto and includes two varieties: the fruity "Kizuna Junmai Ginjo White" and the refreshing "Kizuna Junmai Ginjo Black," both of which pair beautifully with the dishes made from Kochi ingredients.
