Since its launch in 1968, 桔梗信玄餅 (Kikyou Shingen Mochi) has become one of Yamanashi Prefecture's iconic confections. These bite-sized, soft rice cakes are enjoyed with generous amounts of soybean flour and black sugar syrup. It appears that this treat was inspired by 安部川餅 (Abekawa Mochi), traditionally eaten during the Obon Festival, and reimagined in a modern style. The mochi is made without any additives, offering a simple, soft texture that, when combined with the thick black sugar syrup, provides a unique taste that cannot be found elsewhere. Since its debut, the original flavor has been consistently made by hand.
A notable feature of 桔梗信玄餅 (Kikyou Shingen Mochi) is its packaging in a plastic furoshiki. This innovative packaging method was quite novel at the time of its launch and remains one of the reasons for its popularity. The packaging is not done by machines, but rather by artisans who carefully wrap each piece by hand.
