One of the local delicacies you must try when visiting Takayama is "Takayama Ramen." Its characteristic feature is the simple combination of thin, rolled noodles in a soy sauce broth, which is locally referred to as "Chūka Ramen."
You can enjoy authentic Takayama Ramen at "Menya Shirakawa (麺屋しらかわ)," located at a corner of the Takayama Kokubunji Shopping Street, which connects JR Takayama Station and the famous tourist spot "Takayama Old Town." This ramen shop is extremely popular, consistently attracting long lines of customers. Since its opening in 2012, it has built a strong fan base by basing its offerings on traditional Takayama Chūka Ramen while striving to create unique flavors. It has also been featured in the "Michelin Guide Aichi, Gifu, Mie 2019 Special Edition."
The menu offers only the simple "Chūka Ramen" in regular or large sizes, with an option to add a soft-boiled egg. The broth, simmered for over seven hours with chicken bones, bonito, small dried fish, and local vegetables, enhances the deliciousness of the soy sauce, making it a perfect match for the chewy thin noodles. The aromatic grilled chashu pork paired with crunchy Hida green onions, along with the delightful kick of black pepper, adds to the overall flavor and makes it irresistible.
