"Keikan," a type of light sweet made primarily from one of the yam varieties known as "natural yam," is a beloved dessert in Kagoshima Prefecture. In the late Edo period, the first owner of the long-established shop "Akashiya," under the orders of the feudal lord Shimazu Nariakira, transformed the "Keikan," which had existed for over 300 years, into its current form. Since then, this traditional dessert has been passed down through seven generations.
Using a method that incorporates a large amount of air, it boasts a uniquely fluffy elasticity; characterized by a delicate and gentle sweetness, it highlights the rich flavor of the natural yam itself. Not only is it delicious, but it is also rich in protein, vitamins, and minerals. Notably, it contains enzymes that promote physical health, giving it a high commercial value that sets it apart from typical Japanese sweets.
