I recommend opting for the large or extra-large bowl (中盛り or 特盛り), as you can get unlimited refills of the dipping broth starting from the large size! The texture differs from udon noodles because it is made with whole wheat flour, providing a smooth and slippery mouthfeel but with more chewiness. The rich aroma of wheat fills your mouth, leaving a sweet aftertaste. The dipping broth is a hearty concoction made from chicken stock and five types of seafood and shellfish. Next, you dip the noodles into the broth to enjoy the dipping noodles. Since the noodles are thick and straight, they hold the broth well.
