The exquisite Tsantsudō in the seafood tonkotsu ramen series. The Tsantsudō ramen shop has three unusual characteristics: first, it operates only at night! Second, its operating hours are just from 18:00 to 20:30, a mere 2.5 hours! Third, despite the very short opening hours, there is often a long line outside. The broth, which combines tonkotsu with chicken feet, katsuo (bonito), and other small dried fish, is neither greasy nor too light. The flavor of the broth reveals a subtly layered and gentle aroma without a strong soy sauce taste. The noodles are house-made, slightly curved, and of medium thickness. This high-water-content noodle retains a firm and bouncy texture for a longer time, making it smooth and chewy, perfectly complementing the broth!
