Mutekppa was established in 1998 in Nara City, Nara Prefecture, and now has its main store located in Kizugawa City, Kyoto Prefecture. The only locations with the "Mutekppa" sign are in Kyoto, Osaka, and Tokyo, making it a popular ramen shop with fans all over the country.
The biggest feature of this ramen shop is its tonkotsu (pork bone) broth, which surprises even those who prefer strong flavors with its richness upon first tasting. The broth is made from carefully selected high-quality pork bones and water. Approximately 300 kilograms of pork bones are simmered thoroughly, resulting in a broth rich in collagen. If you want an even richer taste, you can choose the "rich" broth with a lot of back fat. There is also a "light" broth available, and you can customize the hardness of the noodles and the amount of green onions according to your preference. The medium-thick, slightly curly noodles are delivered from Kyushu and are cooked in the homemade broth, recommended to be enjoyed with the marinated chashu (braised pork) in a secret sauce. You can also add red ginger, homemade garlic soy sauce, homemade super spicy takana (pickled mustard greens), and sesame powder as toppings.
In addition to tonkotsu ramen, there is also a shoyu (soy sauce) ramen with a fish-based broth, and a W broth ramen that combines tonkotsu and shoyu in a 60:40 ratio, both of which are worth trying. Side dishes such as Miyazaki gyoza, bone-in ribs, and grilled chashu don (rice bowl with special meat dipping sauce, limited on weekends and national holidays) are also available, so be sure to try them as well.
