Hakata Ramen Shin-Shin is a popular Hakata ramen shop with six locations in Fukuoka Prefecture. With the philosophy of "a pure broth that anyone, young or old, can drink up," it distinguishes itself from Nagahama ramen and traditional Hakata ramen by creating a unique tonkotsu (pork bone) soup base. Every morning, they carefully simmer a clear broth free of off-flavors using primarily domestic pork bones, the famous "Arita Chicken" from Saga, and aromatic vegetables from Kyushu, combined with mineral-rich underground water. The specially crafted ultra-thin noodles perfectly cling to the rich and sweet tonkotsu broth. The char siu (braised pork) is simmered in a proprietary sauce, giving it a slightly sweet flavor and a melt-in-your-mouth texture, making it exceptionally delicious. The basic "Hakata Shin-Shin Ramen" features simple toppings of char siu, black fungus, and chopped green onions. There are also variations like the "Soft-Boiled Egg Ramen" with a half-cooked egg, the "Char Siu Ramen" with generous portions of char siu, and the "Spicy Mustard Greens Ramen" topped with a large amount of spicy mustard greens for a kick.
