Higaki is a popular restaurant located in Kobe's Nankinmachi, offering star eel "hako-zushi" (box sushi). Hako-zushi originated in Osaka and is a type of sushi where sushi rice is neatly packed with ingredients like sea bream, shrimp, and star eel into a wooden box, pressed into a box shape. It is a humble dish enjoyed by the people of Kansai to entertain guests.
The restaurant uses star eel known as "Densuke" from the Seto Inland Sea. This type of star eel has a rich texture, and when paired with a sauce made from simmering the eel's head and fish bones, it becomes even more fragrant and delicious, making it hard to stop at just one bite.
The "three kinds of sushi platter," which includes star eel hako-zushi, shrimp hako-zushi, and rolled sushi, as well as scattered sushi, are also incredibly popular. The Higaki restaurant is quite small, with only counter seating. In addition to freshly made sushi prepared upon order, takeout is also available.
