The brewery was established in 1899 (Meiji 32) at its current location. Unlike typical breweries that primarily focus on "cold brewing" (brewing during the cold season), this one practices "four-season brewing," which is quite rare as it brews year-round. Utilizing the unique cold climate of Otaru, it allows for the production of fresh "nama genshu" (unpasteurized sake) even during the hot summer months. The key brewing water comes from the clear underground water of Tengu Mountain, which is rich in natural resources in Otaru City. The sake rice is 100% Hokkaido rice, grown in collaboration with local farms. The representative brand "Hōgawa" is a well-known local sake in Otaru. It is made using 35% Hokkaido-grown sake rice "Suisei" to create a luxurious junmai daiginjo, along with a lineup of products including junmai sake for everyday drinking and elegantly flavored sparkling sake. The store offers 10 to 15 types of tasting samples at any time, with knowledgeable staff providing friendly introductions to help you find the one that suits you best. Additionally, the store features limited edition sakes and its own "junmai fresh nama genshu," among other rare sakes that can only be purchased on-site, which are not to be missed.
