Mimiu is the origin of the dish "Sukiyaki Udon," which combines mountain delicacies and seafood with udon noodles. The key to its flavor lies in the high transparency of the golden broth. Carefully selected Rishiri kelp from Hokkaido and the finest bonito flakes are used, extracting the essence while meticulously skimming off the foam, resulting in a rich umami flavor with a refreshing taste that can be sipped in one go.
The house-made udon noodles remain firm even after being cooked in the pot and soaking up the broth. Ingredients such as shrimp, chicken, grilled anago (conger eel), and vegetables are pre-cooked separately to avoid any off-flavors affecting the broth, a detail that the renowned establishment insists upon.
The shop is located in the business district of Yodoyabashi, with an elegant storefront that stands out and leaves a lasting impression. Upon passing through the noren (fabric curtain), you are greeted by a stone-paved path, and in front of the reception area, there is a small terrace covered with tatami mats, evoking the feel of an old Japanese residence.
