The shrimp crackers from 坂角總本舖 (Sankaku Sohonpo) are made using shrimp, which holds auspicious meanings in Japan. The shrimp are ground into a paste and then crafted into a crispy snack. It is said that this type of shrimp cracker was presented to the lord of the Owari domain, 徳川光友 (Tokugawa Mitsutomo), during the Edo period, making it a product with a glorious history and a special significance.
Each piece of shrimp cracker uses seven natural shrimp and is carefully grilled using a unique double-roasting method passed down since the Edo period. Time is meticulously spent on drying to bring out the umami and rich flavors to the fullest.
