In the 5th year of the Kan'ei era (1665), Sato Kichizaemon invented the method for making the first generation of "Inaniwa Udon." Since then, Sato Yosuke Sohonten has been passed down through generations, becoming a long-established udon specialty store. From selecting ingredients to quality control before shipping, there is no compromise, and it still adheres to the tradition of handmade production. The Inaniwa Udon, made with pure water and carefully selected salt mixed into brine, along with flour specifically for udon, is crafted from simple ingredients and takes three days to complete during the aging process. The master craftsman makes subtle adjustments based on the day's temperature and humidity, creating an exquisite texture that is both chewy and smooth. The restaurant's signature dish is the "Niwami Ten Takeshi Udon," which allows you to enjoy two dipping sauces: soy sauce and sesame miso. Additionally, the "Delicious Duel Tempura Udon," which showcases the different elasticity and smoothness of cold and warm udon, is also a popular item. There are classic options such as simple udon soup and warm udon, as well as variations like the "Thai Curry Two-Flavor Set" featuring green curry and red curry. Seasonal limited-time dishes are also available.
