About Chuka Soba Mitou (中華蕎麦 三藤)
A famous ramen shop that has been awarded Michelin stars multiple times.
Details
Santō Ramen uses ingredients sourced directly from various regions in Japan, and even the water used for the broth is high-quality soft water. The exterior and interior decor of the restaurant are quite beautiful. There are only 10 counter seats in the restaurant, creating an elegant atmosphere reminiscent of a high-end sushi restaurant. For lunch, they offer "Spicy Soy Sauce Ramen" and "Soy Sauce Ramen." Both types of ramen use naturally brewed soy sauce from Shodoshima in Kagawa Prefecture. There are set meals that include ramen and white rice, with options to add extra noodles, a soft-boiled egg, and char siu for an additional fee. In the evening, you can enjoy salt-flavored and miso-flavored ramen. Additionally, there is a variety of à la carte dishes recommended to pair with sake and wine.
