"Ishimatsu Gyoza Honten" is the birthplace of the popular B-class gourmet dish "Hamamatsu Gyoza," which has captivated all of Japan. Established in 1953 in front of Hamamatsu Station, it has maintained its delicious flavor since its inception. Using high-quality ingredients such as seasonal cabbage sourced from selected regions and domestic pork leg meat that has no fishy smell, the filling is exceptionally flavorful. The gyoza skin is thin and smooth, with a unique chewy texture. They have also developed a special slightly sweet vinegar soy sauce for dipping, which perfectly combines the filling, skin, and sauce, creating a taste that cannot be found elsewhere. Another notable feature of Hamamatsu Gyoza is the accompanying bean sprouts served as a side dish for the pan-fried gyoza, which was actually first introduced by Ishimatsu Honten. The philosophy of Ishimatsu Honten comes from the owner's belief that "appearance is also a flavor." After countless attempts, the first-generation owner discovered that the combination of bean sprouts with gyoza and Ishimatsu's special dipping sauce is a perfect match. Additionally, the "special tsunagi" (つなぎ, referring to ingredients that enhance texture), which was completed by the first-generation owner after overcoming many difficulties, ensures that the deliciousness is fully retained within Ishimatsu Gyoza, making it impossible for others to replicate. The sweet flavor of cabbage and the savory taste of pork blend beautifully within the gyoza skin, and once you try it, you'll definitely want more. By the way, Ishimatsu Gyoza Honten reopened in April 2020 after relocating and expanding. They have added seating for groups and a large bus parking area, making it more convenient for customers to dine.
